Spinach & Parmesan Frittata

I know this doesn't sound exciting, but I've made for guests that stay with me and this  healthy breakfast always goes over really well. Light, easy, and any cheese or veggies you have on hand can be thrown it
. This version is simple but really tasty. 

6 eggs
4 cups fresh spinach leaves

1 cup parmesan grated

1 tablespoon olive oil

salt and pepper

Preheat the broiler. In large bowl combine all ingredients except 1/2 of the parm. Heat oil in an oven proof skillet over medium heat. Reduce heat to low and add egg mixture once oil is hot. Cook for 2 mins untouched. While eggs are still runny, add the rest of the parm on top. Place in broiler for 2 mins or until top is bubbly and brown. Let sit for 2 mins before serving. Serves 4 people.
